Penne and Rapini with Artichokes and SquashWell, my Penne and Rapini with Artichokes and Squash is almost vegan, with the exception of anchovy fillets! You can omit the anchovy fillets, but I include them for their rich umami flavor, brightening the flavor of this delicious pasta dish! Simple and nutritious, my Penne and Rapini with Artichokes and Squash stars our cruciferous friend, rapini, a relative of broccoli, with super cleansing properties. Along with artichokes and zucchini squash, this dish is a perfect welcome to the anticipated season of Spring!

12 ounce package of organic penne or other short pasta

Reserved cooking liquid

1/4 cup extra virgin olive oil

4-5 anchovy fillets, chopped

2 teaspoons chopped organic garlic 

1 bunch organic rapini, roughly chopped

1 organic zucchini, cut up

1/2 can artichoke hearts

1 can grape tomatoes with juice

1/2 cup white wine

1 generous teaspoon of Italian seasoning

2 teaspoons chopped Calabrian peppers

1 teaspoon ground veggie pepper

1/2 bunch organic flat leaf parsley, roughly chopped

Grated parmesan for serving, optional

Boil the penne in a pot of salted water until just under al dente

Drain and reserve 1 cup cooking liquid

In a large chef’s pan heat the olive oil to medium high

Stir in the garlic and anchovy

Now add in the rapini, squash and artichokes, stir fry a minute or so

Stir in the tomatoes and juice and the wine

Season with both peppers and the Italian seasoning

Lower to simmer for about 8 minutes

Turn off the heat and add the chopped parsley

Gently mix in the drained penne and the cooking liquid

Cover and let the dish rest for a few minutes

Serve my Penne and Rapini with Artichokes and Squash in deep bowls with parmesan cheese if desired and a glass of dry wine of choice! Enjoy!
