Portuguese Style Fish and Potatoes.
Traditionally made with a salted dried version of cod fish called bacalao my Portuguese Style Fish and Potatoes is super easy to prepare and very delicious and nutritious! I did not use a dried fish; for this version, I used orange roughy and my grandson just raved about it, which means it is five star good!! Enjoy my Portuguese Style Fish and Potatoes with a side salad and dry white wine! Just delicious!
1 lb white fish of choice (seasoned with salt, pepper, herbs de Provence, dried tarragon, fennel seeds and olive oil)
10-12 organic golden potatoes, scrubbed and thinly sliced
1 large organic sweet onion, peeled, cut in half and thinly sliced
Himalayan salt and pepper to taste
1 teaspoon herbes de Provence
1/2 teaspoon courtly ground fennel seeds
1 teaspoon dried tarragon leaves
1/4 cup of extra virgin olive oil
2 tablespoons unsalted butter(cut up)
1 organic lemon, thinly sliced
Preheat oven to 375 degrees Fahrenheit
In a rectangular baking pan, spread the potatoes and onions evenly
Season with the herbs and spices
Toss with most of the olive oil(reserve a bit)
Place the seasoned fish over the potatoes
Dredge with reserved bit of olive oil
Lay sliced lemon over the fish
Dot the fish with the butter
Cover the pan with foil or lid
Bake for 35 minutes until potatoes are cooked through
Uncover and bake for an additional 15 minutes to brown the top
Serve and Enjoy!
