Dutch Oven Coq au Vin.
So this is my version of Coq au Vin! My Dutch Oven Coq au Vin is a one pot supper made with free range chicken parts of choice and organic vegetables that have been seasoned with provincial herbs and braised in sherry and wine! My Dutch Oven Coq au Vin is simple, delicious and always nutritious. Serve in deep bowls and a salad side, Enjoy!
1/4 cup extra virgin olive oil
1 pound free range chicken parts of choice, (I like wings and chicken tenders)
2 organic carrots, cut in large pieces
1 organic onion, cut in large pieces
1/4 bunch organic celery, cut in large pieces
4 organic bell peppers, cut in large pieces
1/2 cup large cut organic fennel
Several shiitake and or maitake mushrooms, cut up
10-12 baby organic potatoes
1 teaspoon herbes de Provence
1 teaspoon poultry seasoning( I like Burlap & Barrel’s Pork and Poultry seasoning)
Salt and pepper to taste
1/2 teaspoon Tunisian red pepper flakes
1/4 cup each dry sherry and white wine
10-12 organic grape tomatoes
Preheat oven to 375 degrees Fahrenheit
In a caste iron dutch oven, heat the oil to medium high
Brown the chicken pieces, all the vegetables (except the tomatoes) and all the seasonings for several minutes, stir gently
add the sherry and wine
Remove from heat and add the tomatoes
Cover the pot
Transfer the pot to the oven and braise for 1 hour and 15 minutes until cooked through
