Bucatini with Roasted Vegetables.
My Bucatini with Roasted Vegetables is just bursting with late summer vegetable color, texture, nutrition and flavor. I am keeping this one vegetarian but this recipe can be adjusted to accommodate any protein of choice. You can use whatever vegetables you have on hand but be sure to include organic beets and tomatoes which are in season right now! I added organic cauliflower and zucchini to the vegetable medley as well. Organic parsley and extra fresh tomatoes are added in at the end. My Bucatini with Roasted Vegetables is a super simple, easy recipe and takes just minutes to prepare!
2-3 organic beets, trim rough peeling and cut in chunks
1 container of organic cherry or grape tomatoes, leave whole
1/4 organic cauliflower, cut in chunks
1-2 organic zucchini , cut in chunks
1/4 cup extra virgin olive oil
Salt, pepper and crushed red or Calabrian pepper flakes
1/2 teaspoon Italian seasoning
1 bunch organic flat leaf parsley, roughly chopped, reserved for finishing
1/2 bunch organic basil leaves, roughly chopped, reserved for finishing
2 organic tomatoes, cut in wedges
1 pound organic bucatini pasta, spaghetti or linguine
1 cup reserved pasta water
Shredded Tuscan Italian cheese blend or Parmesan for serving
Preheat oven to 400 degrees Fahrenheit
Spread the prepared cut up vegetables on a baking sheet, drizzle with olive oil and season with the salt, peppers and seasoning
Roast the vegetables for about 35 minutes until tender and cherry tomatoes are bursting
Remove from oven and transfer to a large stove top chef’s pan or skillet
Mix in the parsley, basil and fresh tomato wedges
Keep at a very low simmer
In the meantime, bring a large pot of salted water to a boil
Add pasta and cook until slightly under al dente
Add the drained pasta to the chef’s pan, gently mix until the pasta takes on the red color of the beets and tomatoes
Add the reserved pasta water, as needed
Serve in deep bowls with a sprinkling of cheese
Enjoy with a dry wine of choice and fresh salad on the side
Note: if adding a protein such as chicken tenders, shrimp or sausage
The meat can be roasted with the vegetables or you can roast it separately.
