Shrimp Enchiladas with Seafood Bisque.
My Shrimp Enchiladas with Seafood Bisque are filled with shrimp, black beans and corn, nestled in cheddar cheese and covered with a prepared seafood bisque! The shrimp filling is brightened with lime and seasoned with cumin, oregano and chili flakes. My Shrimp Enchiladas with Seafood Bisque are so easy to prepare, delicious and nutritious; so it’s best to make extra to give to those you love! Enjoy!
Extra virgin olive oil for the bottom of the baking dish and skillet
Several tablespoons of prepared enchilada sauce, set aside
1/2 organic leek, sliced
2 teaspoons chopped organic garlic or fresh cloves, chopped
1/2-1 pound of raw shrimp, tails off
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon chili flakes( I used Cabenaro from Burlap and Barrel )
Salt and pepper to taste
Several splashed of lime juice
1 cup drained and rinsed black beans
1 cup frozen organic corn kernels
Approximately 12 corn or flour tortillas( I like corn)
8 ounces of sliced or shredded cheddar cheese
1 package of prepared seafood bisque(Vital Choice is good)
Cholula or hot sauce of choice
Season the shrimp with the spices herbs and chili
In a medium skillet heat the olive oil to medium high and add the leeks and garlic, stir fry for a minute
Stir in the seasoned shrimp and lime juice
Add the black beans and corn
Cook until shrimp are cooked through, a minute or so
Preheat oven to 350 degrees Fahrenheit
Heat up the tortillas in microwave or oven until pliable
Coat the bottom of baking dish(or dishes) with olive oil and some of the reserved enchilada sauce
Fill each tortillas with the shrimp mixture and some of the cheese and roll them up, placing them in the baking dish
Sprinkle with the rest of the enchiladas sauce and more cheese
Cover with the prepared seafood bisque( you will need to add a bit of water to the bisque)
Top with the rest of the cheese and sprinkle with the hot sauce
Bake covered in the oven for 25 minutes
Uncover and bake for another 5 minutes
Remove from oven and let rest before serving
Note: you can make these ahead and easily reheat them
