Summer Chickpea SaladMy Summer Chickpea Salad is a very simple alternative to traditional potato salad for your next summer picnic or potluck! The protein rich chickpeas are bathed in a tangy, creamy yogurt dressing and topped with olives, hardboiled eggs and avocado slices. This is a very healthy alternative summer salad, but I bet you will want to enjoy it all year round! 

Enjoy my Summer Chickpea Salad with a grilled protein of choice or serve it as a stand alone vegetarian main! Just Delicious!

In a large mixing bowl combine:

2 drained cans of garbanzo beans

1/2 cup organic chopped celery

1/2 cup organic chopped chives or scallions 

2-3 organic radishes, chopped 

1 small organic cucumber, chopped

1 teaspoon dried dill leaves

1 Tablespoon dried mint leaves

1/2 teaspoon dried Harissa seasoning,Frontier

1/2 teaspoon Himalayan salt

1/2 teaspoon veggie pepper, frontier

1 Tablespoons lemon juice

Mix thoroughly 

In a small mixing bowl combine:

1/2 cup greek yogurt

2 Tablespoons mayonaise

2 teaspoons spicy whole grain or dijon mustard

2 teaspoons lemon juice

Mix thoroughly and stir into the large salad bowl

Transfer salad to a sewing dish

Top the salad with:

1 hard boiled egg, quartered

A few green olives, cut in half

1/2 organic avocado, sliced lengthwise

Sprinkle with a dash of Harissa seasoning
