One Pot Cod Fish and Gnocchi.
So simple, so delicious and so nutritious, My One Pot Cod Fish and Gnocchi recipe takes just minutes to prepare! This is a perfect one pot supper filled with protein, organic veggies and yummy gnocchi. Make sure you keep this recipe because you will want to repeat it often. Change up the fish choice with salmon or shrimp or you can make my One Pot Cod Fish and Gnocchi with chicken as well; and for the vegetarian version, use tofu. My One Pot Cod Fish and Gnocchi is very versatile! Enjoy.
The measurements are really up to you depending upon how many you are feeding:
Splash of extra virgin olive oil
One package of cod fish pieces or protein of choice
4-6 Bella mushrooms, sliced
4-6 organic green onions, chopped
A handful of snipped organic green bean, keep whole
1 small organic zucchini, sliced in rounds
1/2 organic yellow or red bell pepper, cut up
Several organic grape tomatoes, keep whole
Season with salt, pepper, dried tarragon leaves to taste
Add some tutta porchetta seasoning, Burlap and Barrel to taste
1/2 package or more of prepared gnocchi
A good splash of wine
About 2 tablespoons unsalted butter
In a fry pan or chef’s pan, sauté the fish, mushrooms and onions in the olive oil on medium high heat
Add in everything else
Reduce to simmer and cook for several minutes until fish is cooked through
Remove from heat
Serve in bowls and enjoy!
When reheating you may need a bit more wine
