Cod Crab and Sardine Pasta Sauce.
Fish and tomatoes over pasta!! This is my comfort food!! We are still quite cold UP here in the North, so warming, comforting foods are still in order! But, February is Heart month and also a very spiritual time of year for many. My Cod,Crab and Sardine Pasta Sauce is perfect for the Lenten season or anytime you want to add more fish to your diet!
1/4 cup extra virgin olive oil
4-5 cloves fresh organic garlic, peeled and sliced
1 cup chopped organic fennel
1 organic leek, sliced in rounds
1 can San Marzano tomatoes, chopped, add some water to thin
A handful of dried porcini mushrooms
1 teaspoon tutto porchetta seasoning(Burlap and Barrel) or any fennel seasoning combination
1 teaspoon Calabrian peppers, chopped
Himalayan pink salt to taste
3-4 teaspoons ground black pepper(trust me)
1 bunch of fresh chopped parsley or 1/4 cup dried flakes
1 package cod, bits and pieces (or fillet cut up in chunks)
1 can fancy white lump crab meat and juice
2 cans olive oil packed sardines
In a large chef’s pan, heat the oil to medium high
Sauté the garlic, fennel and leeks
Add the tomatoes and extra water
Stir in the dried mushrooms and all the seasonings
Add in the fish and crab
Lower to simmer for about 10 minutes
Gently stir in the sardines
Cover, remove from heat and let rest
In the meantime bring a large pot of salted water to a boil and cook the pasta of your choice to just under al dente, drain
You can add the pasta to the sauce or keep the pasta separate tossed with a little olive oil and spoon the sauce over it!
Serve my Cod,Crab and Sardine Pasta Sauce in deep bowls with sprinkling of parmesan cheese if you desire. Enjoy with wine of choice and salad!
