IHalloumi with Spring Vegetablesf you have 15 minutes to spare in the kitchen, you can have my Halloumi with Spring Vegetables plated and served; it is that easy!!!

This is my first attempt of preparing halloumi and honestly I am not going back; it is that delicious!!! Only 7 ingredients brings my Halloumi with Spring Vegetables together in no time flat.

There really is no recipe here because you can use any vegetables on hand; and the only seasoning is Zaatar and a splash of balsamic vinegar as halloumi is salty enough. 

In a medium cast iron skillet heat up extra virgin olive oil to hot.

In the meantime slice up a brick of halloumi and in a bowl dredge it with a bit of olive oil and a good amount of Zaatar. 

Transfer the halloumi to the hot oil and sear it on both sides until it is very browned. Transfer the halloumi to a plate and dredge with a bit of balsamic vinegar. In the same skillet stir fry whatever vegetables you have on hand. I used green onions, bell pepper and asparagus. Add the halloumi back into the skillet and gently mix. Turn off the heat and transfer this simple meal into a serving dish. Enjoy!!!
