Cheesy Butternut Sauce with Mushrooms and Spinach.
This super delicious and comforting pasta sauce is full of nutritious organic vegetables and unique seasonings! You can use my Cheesy Butternut Sauce with Mushrooms and Spinach on any pasta of choice. You can use it as a sauce over the pasta or use it in a baked pasta or rice dish or make Lasagna with it! You can even thin it out a bit and eat it as a soup with crusty bread! You can use it to make a lovely risotto as well. Keep my recipe for Cheesy Butternut Sauce with Mushrooms and Spinach on hand because it is a go to for the chilly days ahead! Enjoy!!
1/4 cup extra virgin olive oil
1 small organic onion , chopped
2 cloves organic garlic, chopped
1 teaspoon dried Italian sage
1/2 teaspoon ground nutmeg
1 teaspoon Italian Riviera seasoning, “Burlap and Barrel”
1 teaspoon chopped Calabrian peppers
1/2 teaspoon ground black pepper
1/2 cup dried mushroom medley, soaked in enough water to reserve
1/4 shirt miso paste
1 15 ounce can organic butternut squash purée, “Farmer’s Market”
1 organic tomato, chopped
Reserved salted pasta water, (1/2- 1 cup)
5-6 ounces organic greens, chopped
1/2 cup Tuscan Blend shaved cheese
1 ounce soft goat cheese
12 ounces pasta of choice, boiled in salted water, reserve some liquid
Boil the pasta, drain, toss with olive oil and set aside
In a chef’s pan heat the olive oil to medium high
Add the onion, garlic and all the spices and seasonings, stir fry
Stir in the soaked mushrooms with the liquid
Mix in the miso paste
Add the butternut purée and chopped tomato
Reduce to simmer
Add in the chopped greens and reserved pasta water
Simmer the sauce for about 5 minutes
Turn the heat off and swirl in the cheeses
Serve over pasta or use the sauce in the suggested dishes above
Enjoy with a fresh green salad and wine of choice!
