I am not even going to try to pronounce the Finnish name of this dish! That said, my Finnish Beef, Corn and Potato Casserole is one of the simplest and most delicious casserole recipes you will ever enjoy!! One of my dear friends was reminiscing recently about a potato and corn recipe that her grandmother would make whenever she would visit her. She is Finnish on both sides so I assumed it must be a traditional Finnish recipe and my research confirmed that, indeed, it is a very traditional Finnish dish! If you enjoy this blog, you know that I love simplicity in cooking and this Finnish Beef, Corn and Potato Casserole is just that, simple, nutritious and delicious. With minimal ingredients and seasonings, you will just be amazed at the burst of flavor in this yummy casserole!

Depending upon how many you are serving the ingredient amounts will change; so I am not going to list exact amounts here.

A good amount of unsalted butter

Free range ground beef(typically 1 pound for a medium casserole)

1 medium onion, diced(again, use more if feeding more)

Dried marjoram, salt and pepper to taste

Several golden potatoes, thinly sliced on a mandoline slicer

Thinly sliced organic carrots(1or 2 should be enough)

More salt, pepper, marjoram and dried parsley

Frozen corn, rinsed and drained( as much as you like)

A bit more butter for layering 

Enough whole milk to cover casserole to about two thirds high

Preheat oven to 375 degrees Fahrenheit 

In a skillet melt the butter to medium high

Add the onions and ground beef and stir fry for about 8-10 minutes

Butter a casserole dish 

Layer the bottom with potatoes and season as desired

Layer with carrots, then half of the the corn and a bit more butter

Add all the onion and beef medley along with juices

Layer again with potatoes, season and butter as desired

Add the rest of the corn and layer the top with the rest of potatoes

Top with a few pats of butter, cover with the milk

Sprinkle the top with dried parsley

Cover the casserole dish with aluminum foil or glass cover

Bake for 50 minutes, uncover and bake for another 15 minutes until top is browned.
