1 cup cooked jasmine rice
2 organic sweet potatoes, cut up and boiled
1/2 organic seedless cucumber, chopped
1 can artichoke hearts, drained
1 can fava beans, drained
1 cup organic fresh spinach, chopped
1 tablespoon Bulgarian pepper sauce
1 tablespoon Calabrian pepper relish
1/2 cup fresh mint, roughly chopped
1/2 pint organic grape tomatoes
2 tablespoons Israeli zaatar
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Dash of Aleppo pepper flakes
Pickled onion as garnish
In a large mixing bowl, combine first 14 ingredients
Mix gently
Transfer to a serving bowl
Sprinkle with Aleppo pepper flakes
Garnish with pickled onion
Serve with lamb, sausage or any grilled entrée
Enjoy with a full bodied red wine or smooth Chardonnay!
