White Bean Chicken Stew with Rapini.
So it is still super cold here in the North and actually throughout most of the country! Another soup or stew is in order for this time of year! My White Bean Chicken Stew with Rapini is a delicious and healthy medley of heirloom white beans, organic chicken and nutritious rapini or broccoli rabé. 1 pound heirloom caballero beans or other small white bean, Rancho Gordo has them
Water to cover the beans
3 tablespoons extra virgin olive oil
2 bay leaves
1/2 teaspoon black veggie pepper, Frontier
1 teaspoon chopped Calabrian peppers, DeLallo
1 teaspoon herbes de Provence
2 teaspoons chopped organic garlic, or 2 fresh cloves, chopped
2 Tablespoons organic chopped onions, or 1 small fresh, chopped
1/2 cup chopped organic celery
1/2 pint organic grape tomatoes, keep whole
2 containers unsalted chicken broth
10-12 organic chicken wings sections, bone in
1 bunch organic rapini, chopped
Salt to taste
4-5 ounces of organic short pasta like orecchiette
Grated parmesan for serving, optional
In a stockpot, cover the beans with water
Add the olive oil, onions, garlic, celery, both peppers , bay leaves and the herbes de Provence
Bring the pot to a boil for 15 minutes, then lower to simmer
Add the tomatoes, broth, chicken sections and the rapini
Salt to taste
Cover and simmer for 2 hours, occasionally stirring
Add water if needed, turn off heat
Stir in the pasta and more water if needed
Cover and let rest, the pasta will cook through
