My Tuna and White Bean Pasta Salad is a delicious medley of healthy fish protein, fiber rich legumes and organic vegetables simply combined to make a nutritious light meal that is also a perfect protein. Cavatappi pasta provides substance to this dish along with cannelloni white beans, nutritious artichoke hearts, organic carrots, leeks, cucumbers, bell peppers,radishes, fennel and parsley. The star of the dish is, of course, the highest quality olive oil packed yellow fin tuna that is simply seasoned with a touch of zaatar and brightened with Spanish manzanilla olives and sherry vinegar. Bean Pasta Salad is a snap to make; a simple salad that is delicious, nutritious and a real crowd pleaser! Enjoy with a crisp dry white wine or dry Riesling!


2-3 cans of high quality olive oil packed yellow fin tuna,use some of the oil
12 ounces of cavatappi or other short pasta, cooked al dente
2 cans of cannelloni beans, drained
1 can artichoke heart quarters, drained
1 organic red or orange bell pepper, cut in half then sliced
1-2 organic carrots, sliced diagonally
1/2 cup chopped organic leek
1 seedless organic cucumber, sliced
6 organic radishes, sliced
1/2 cup sliced organic fennel and fronds, use a mandolin
1 bunch organic flat leaf parsley, roughly chopped
1/2 cup manzanilla olives, sliced
Salt and pepper to taste
Fresh ground chophouse seasoning to taste, Frontier
1 teaspoon zaatar seasoning
1/4 cup extra virgin olive oil
1/4 cup Spanish sherry vinegar
In a large mixing bowl, combine all the ingredients
Toss and season
Transfer to a serving dish
Enjoy with a dry white or Riesling
Just delicious!
