My Tuna Potato Pea Salad with Fennel and Sprouts is loaded with nutritious organic steamed
cauliflower, potatoes, fresh or frozen peas and green beans; then combined with olive oil
packed tuna, fresh chopped organic fennel, parsley, a sprinkle of salad herbs and fennel seeds,
all dressed up with a Spanish sherry vinegar! The addition of fresh organic sprouted lentils and
sunflower seeds add crunch and vegetable protein to this super delicious Spring entrée salad.

2 cans olive oil packed tuna, do not drain
1 cup steamed organic potatoes, cut up
1 cup steamed organic cauliflower, cut up
1/2 cup steamed organic green beans
1 cup frozen organic peas, thawed or fresh peas, steamed
1/2 cup fresh organic fennel with fronds, chopped
1 bunch organic flat leaf parsley, roughly chopped
A sprinkle of salad herbs (frontier)
Freshly ground fennel seeds
Salt and pepper to taste
1/2 cup sprouted organic lentils and sunflower seeds
1/4 cup Spanish sherry vinegar
In a large mixing bowl, add all above ingredients
Gently toss to combine
Transfer to a serving bowl
