This is a simple tuna pasta salad with Mediterranean flare, enormous flavor and nutrition!
Perfect to celebrate the coming of Spring, the Vernal Equinox and warmer days to come!
8 oz medium pasta shells, cooked al dente
3 cans olive oil packed tuna, drained
1 bag frozen organic peas
1 cup chopped organic celery
2-3 organic carrots, finely sliced
1 red bell pepper, chopped
1/2 cup green Spanish olives
1/4 cup pitted kalamata olives
6-8 radishes, finely sliced
1 cup roughly chopped fresh dill, cilantro and parsley
2 Tablespoons sherry vinegar
1 teaspoon zaatar seasoning
1/2 teaspoon ground fennel seed
1/2 teaspoon aleppo pepper flakes
1/2 cup prepared Fatoush dressing
Salt and pepper to taste
In a large mixing bowl, combine the pasta, tuna, vegetables, olives and fresh herbs
Splash with the sherry vinegar and toss
Add the dried seasonings, Fatoush dressing, salt and pepper
Transfer to a serving bowl
Serve as a light spring entree or lunch with a crisp white wine!
