Tofu Salad
Tofu Salad a la Seacoast
I cannot even try to guess how many pounds of this delicious, nutritious salad our Seacoast Deli sold over the years! It simply was the best seller. It really is a stand alone vegan meal full of protein, vitamins and minerals and it tastes great!! Enjoy!
2 lbs of extra firm tofu, cubed
3 large organic carrots, sliced
1/2 head of celery, chopped medium
3 green onions, chopped
2-3 summer squash(yellow crookneck or zucchini), chopped medium
1 sweet red pepper, chopped medium
1/2 cup tamari sauce
1/2 cup extra virgin olive oil
3/4 cup nutritional yeast
1/2 cup raw sunflower seeds
1 tsp ground cumin
1 tsp dried dill
1 tsp spike seasoning or frontier chophouse seasoning
1 tsp granulated garlic
parsley or cilantro for garnish
In a large bowl mix all the ingredients together and transfer to a shallow serving dish, garnish with coarsely chopped flat leaf parsley or cilantro. Serves 4-6.
Variations: add chopped asparagus and baby leaf spinach for a nutritional boost! Replace the squash with sliced seedless cucumbers for a lighter version with the same great flavor! Wrap it in Nori seaweed to make delicious and unique spring rolls! Enjoy!!
