tandoori chicken tagine The Tandoori spice mixture in a yogurt marinade for chicken makes a classic East Indian dish that is not only extremely flavorful, but super nutritious! Instead of grilling the chicken, I have turned to the Tagine cooking vessel to add even more flavor with aromatic organic vegetables, broth, saffron and additional seasonings. The Tagine keeps the chicken so very moist and the chicken/vegetable broth is fabulous over classic basmati rice. What a delicious and nutritious way to make tandoori chicken and now it’s Tandoori Chicken Tagine! Best enjoyed with authentic Indian basmati rice, naan bread, a nice Chardonnay or Indian pale ale! Simply yummy!!

4 boneless chicken breasts, cut in half lengthwise
1 cup plain Greek yogurt or plain kefir
1 tablespoon tandoori spice blend Frontier
1/4 cup olive oil
1 large sweet onion, quartered
1 large leek, white and green parts chopped
4 cloves garlic, sliced
1 large organic carrot, sliced
1 large organic yellow carrot, sliced
1 medium organic Italian squash or yellow squash
1 organic green bell pepper, sliced
1 organic sweet red bell pepper,sliced
2 tablespoons tandoori spice blend, Frontier
1 tablespoon Ras El Hanout spice blend, Frontier
1 teaspoon roasted coriander root, McCormick
Flake kosher salt, to taste
Dash of Aleppo pepper flakes
Fresh ground exotic pepper blend,to taste
1/2 teaspoon saffron threads
2 cups unsalted chicken broth
2 medium organic tomatoes, quartered
1 bunch organic flat leaf parsley, roughly chopped
In a shallow baking dish blend chicken with yogurt or kefir and 1 tablespoon tandoori spice blend, salt and Aleppo pepper
cover and marinade for 3-4 hours
Remove chicken from marinade and set aside, discard marinade

Heat oil in a Tagine cooking vessel on medium high
Add onion, carrots and garlic, cook stirring about 3 minutes
Add chicken and brown on all sides
Add saffron and all additional spices
Add squash, peppers and broth
Reduce to simmer for 30 minutes
Add tomato wedges and parsley
Stir to blend and simmer 5 minutes

Tandoori Chicken Tagine us ready to serve from the Tagine with Naan bread, authentic basmati rice and a crisp salad!

Dry Chardonnay or Indian pale ale
