Summertime Pasta and Tuna Salad

My Summertime Pasta and Tuna Salad is long on protein, full of delicious vegetables and much lower in carbohydrates as I use a vegetable rotini to replace the traditional pasta! Garbanzo and Fava beans star with olive oil packed tuna, artichokes, pimento stuffed olives and an array of healthy organic vegetables and herbs tossed with the pasta and dressed with a lemony vinaigrette for that just perfect umami touch! Bring this Summertime Pasta and Tuna Salad to your next family gathering or potluck; it will be a hit!

1 package Barillo vegetable rotini, or similar, boiled to slightly al dente, drained

2 cans of olive oil packed tuna, slightly drained

1 can of garbanzo/fava bean medley or any bean of choice, drained and rinsed

3 organic green onions, chopped

1 small organic red onion, peeled and chopped

5-6 organic radishes, sliced

2-3 stalks organic celery, chopped

1 organic zucchini, chopped

1/2 cup chopped organic cauliflower 

1/2 cup organic matchstick carrots

2-3 organic baby bell peppers, sliced

1/2 can quartered artichoke hearts, roughly chopped

Handful of pimento stuffed green olives, halved

Several sprigs of fresh organic basil, tarragon and mint, chopped

1 bunch organic cilantro, roughly chopped

1 teaspoon dried oregano

Salt and pepper to taste

1/4 cup extra virgin olive oil

Generous splash of pineapple vinegar(apple cider is fine too)

Splash of pineapple white balsamic vinegar( just white balsamic is fine)

Juice of 1/2 organic lemon

In a large mixing bowl, combine all the ingredients, mix gently and correct seasonings if necessary
