Stovetop Roasted Tandoori Vegetables

Just craving the taste of Indian spiced vegetables, I couldn’t decide upon roasted eggplant and tomatoes, potatoes laden with cumin seed or Delhi Style green beans; so I combined them all together to make my Stovetop Roasted Tandoori Vegetables! My Stovetop Roasted Tandoori Vegetables  dish is a delicious vegetarian entrée that is filled with healthy organic vegetables, protein rich garbanzo beans and aromatic Indian spices! Serve my Stovetop Roasted Tandoori Vegetables on top of a bed of aromatic basmati rice. My Stovetop Roasted Tandoori Vegetables is a really delicious, healthy and vegetarian meal!   ENJOY!   A Light Rosé wine is a perfect pair!

2 golden potatoes, diced

1 medium eggplant, peeled and diced

1 teaspoon tandoori masala spice, Frontier

1/4 cup extra virgin olive oil 

3-4 organic shallots, peeled and sliced 

1/2 piece organic ginger, peeled and sliced 

1&1/2 teaspoons whole cumin seeds 

1&1/2 teaspoons whole mustard seeds 

1 teaspoon ground Kashmiri pepper

1 teaspoon ground coriander 

2 tablespoons dried mint leaves

Salt to taste

2 ripe organic tomatoes, diced 

3 organic baby red peppers, sliced 

1/2 lb organic green beans 

1 can garbanzo beans, drained 

2-3 teaspoons organic lime or lemon juice 

1/2 bunch cilantro or flat leaf parsley, roughly chopped 

1 tablespoon nigella seeds plus extra for garnish 

In a mixing bowl add potatoes and eggplant

Add tandoori spice and toss, set aside

In another bowl mix tomatoes, peppers, green beans and garbanzo beans, set aside

In a large chef’s pan, heat the oil on medium high 

Add shallots and next 7 spices

Cook until seeds pop, less than a minute!

Add the potato eggplant mixture

Cook on medium for about five minutes, add extra olive oil if vegetables dry out

Add reserved tomato vegetable mixture 

Add mint, lime juice and parsley or cilantro 

Lower heat and simmer for 20 minutes until vegetables are tender 

Add nigella seeds

Remove from heat

Serve over basmati rice and garnish with extra nigella seeds
