Spring Vegetable Stir Fry
with escarole, shallots, green beans and artichokes

escarole and green bean stir fryThis is actually a stand alone vegetarian stir fry but is fabulous with  lamb chops! Just loaded with nutritious spring vegetables!! Add more nutrition with asparagus and baby bok choy as a variation!  Spring Vegetable Stir Fry with escarole, shallots, green beans and artichokes is fabulous!

Serve it with whole wheat or regular orzo and a dry white wine!

 

3 Tablespoons citrus infused oil
3 shallots peeled and sliced
2 cups trimmed green beans
1/2 cup baby carrots
1 bunch of escarole cut in small wedges
1 can quartered artichoke hearts, drained
2 organic tomatoes, quartered
1 Tablespoons Greek or Mediterranean spice blend
2 Tablespoons lemon juice

Heat oil and fry shallots in a large chef pan or wok
Add all vegetables wept the artichokes and tomatoes
Toss and stir fry with spice blend
Add artichokes and tomatoes and lemon juice
Mix thoroughly and remove from heat
Serve immediately with orzo and lamb if desired!
Wonderful with a very dry wine. Enjoy!!
