Boost your Immune System 

My Soba with Roasted Medicinal Mushrooms is an immune system booster! There is nothing better than medicinal mushrooms to boost the immune system and considering what we are going through these days, I thought it a good idea to post an immune system boosting recipe that is so delicious and healthy! My Soba with Roasted Medicinal Mushrooms fits the bill! Enjoy this healthy dish and keep the virus away! A healthy immune system keeps you safe!

Make a miso butter with:

4 tablespoons unsalted room temperature butter

3 tablespoons organic miso

3 teaspoons sake

Blend well, set aside

1 pound mixed organic mushrooms( shiitake, oyster, maitake, royal trumpets, enoki for example) cleaned and cut into pieces

Salt, pepper, Korean pepper flakes(gochugaru)

1/4 cup extra virgin olive oil 

2 tablespoon organic lemon juice

1 package organic soba noodles

Preheat oven to 425 degrees Fahrenheit 

Arrange mushrooms in an ovenproof skillet

Season the mushrooms with salt and peppers

Drizzle mushrooms with olive oil

Dot mushrooms with 3 tablespoons of the miso butter

Roast mushrooms for 35 minutes, toss and baste them mid through 

Add the lemon juice to the remainder of miso butter, set aside

In the meantime in a stockpot of water, boil the soba and drain

Toss the noodles with the remainder of miso butter/lemon mixture

Remove the mushrooms from the oven and toss them with juices with the noodles

Serve with organic romaine leaves and a Riesling wine, if desired.
