Simple Turkey Roast.
The weather is changing in the North; soon leaves will be falling and autumn will arrive! The taste of roasted turkey welcomes this time of year! I was fortunate to find a Pennsylvania organic farm with just the right sized pieces of free range turkey, Dutch Meadows (dutchmeadowsfarm.com)
My Simple Turkey Roast is the remedy for cooler days to come. Simply roast a small free range turkey breast and wings on top of a bed of organic celery, onions and mushrooms seasoned with herbes de Provence, Tandoori Masala seasoning and a bit of white wine. Add some organic potatoes midway for the simplest roast turkey dinner you will ever make! Slow down and savor this upcoming season! Enjoy
1 small free range turkey breast
2 small free range turkey wings
1 cup chopped organic celery
1 organic onion, chopped
4 trumpet mushrooms, cut up(or mushroom of choice)
1 tablespoon herbes de Provence
3/4 teaspoon tandoori masala seasoning,Frontier is good
Himalayan salt and ground pepper to taste
A good dredge of extra virgin olive oil
1/4 cup of white wine
1 organic lemon, quartered
Assorted small or wedged organic potatoes
Pre heat oven to 350 degrees Fahrenheit
Spread the celery, onions and mushrooms in a small roasting pan
Season with half of the herbs and spices
Nestle the turkey pieces on top and season again with remainder of the herbs and spices
Dredge with olive oil and add the wine
Squeeze the lemon quarters on top then nestle those quarters in and around the turkey
Cover and bake for 45 minutes, baste
Add the potatoes to the pan, scattering them
Cover and bake another 45 minutes, baste
Uncover the pan and brown for another 25-30 minutes
Baste and remove from oven, let rest for a bit covered
Serve my Simple Turkey Roast with a green salad and marinated steamed beets, enjoy with Chardonnay!
