Simple Shrimp and Vegetable Alfredo

Simple Shrimp and Vegetable AlfredoSo I cheated, I have to admit it; I used a jarred Alfredo sauce for this easy pasta recipe! But there are some really good prepared Alfredo sauces out there that are natural, wholesome and, in my opinion, a pantry staple! For my Simple Shrimp and Vegetable Alfredo I used Cucina Antica Rosa Alfredo, organic broccoli, zucchini, mushrooms and loads of organic baby power greens! You can omit the shrimp for the vegetarian version or substitute with another protein of choice, cooked lobster would be good too. You can use any variety of jarred Alfredo that you prefer. An organic short pasta is perfect for this dish; I used a cut called trofie but penne or rigatoni would be great too. This is a really delicious pasta dish! Enjoy!

1/4 cup extra virgin olive oil

1 head organic broccoli or 2 broccolini, cut up

2 organic zucchini, cut up

6 organic mushrooms, cut up

1 tablespoon chopped Calabrian pepper, DeLallo is good

Himalayan salt and veggie pepper to taste

1/2 cup white wine

1 16 ounce jar prepared Alfredo sauce of choice, Cucina Antica is good

Extra boiling water to thin the sauce

1/2 pound organic short pasta, cooked to just under al dente

5-6 ounces of organic baby power greens

10-12 organic grape tomatoes

12 grilled extra large shrimp, Wild Fork (you can use raw shrimp as well but will need to cook a little longer, adding it before the pasta and greens)

In a large chef’s pan heat the oil to medium heat

Add in the cut vegetables and seasonings

Stir in the wine then add in the sauce and extra water to thin the sauce

Lower to simmer and add in the cooked pasta, baby greens and tomatoes

Stir in the shrimp, cover and simmer for a couple of minutes

Remove from heat and let rest for another minute or so

Enjoy my Simple Shrimp and Vegetable Alfredo with a fresh green salad and wine of choice! So delicious!

Note: if you use raw shrimp or other raw protein, add it to the pan before the pasta and greens and cook through.
