simple roasted seafoodMy Simple Roasted Seafood is just too simple for words!! Luscious shellfish and seafood simply roasted in white wine, Meyer lemon and olive oil. This dish takes minutes to prepare and is just loaded with healthy, protein rich treasures from the sea! This roasted feast served on a platter is so impressive, your guests will imagine that you slaved over the oven; no need to tell them how easy this meal is to prepare! Can be served with crusty bread, a pasta and veggie side dish, rice or couscous. Enjoy with a fresh tossed salad and a light dry white wine! Simply fabulous!

 

1 lb orange roughy fillet, cod, sable fish, trout, salmon or other firm fish
10-12 raw shrimp, peeled and deveined
1 lb snow crab legs and claws
8 large scallops, calamari pieces or clams
1/4 cup olive oil
1/2 cup dry white wine
3 shallots,peeled and sliced
4 cloves garlic, peeled and sliced
1teaspoon grey or Himalayan salt
1/2 teaspoon Aleppo pepper flakes
1teaspoon Old Bay seasoning
1 teaspoon seafood seasoning or 1/2 teaspoon each of tarragon leaves and fennel seeds
2 organic Meyer or regular lemons, thinly sliced
1 bunch flat leaf parsley, chopped

Arrange the seafood in a shallow roasting pan or baking sheet with edges
Sprinkle the seafood with all of the seasonings
Toss to coat
Add the shallots and garlic
Add wine and olive oil
Bake in a 425 degree oven for about 25- 30 minutes
Do not stir to keep those fish fillets intake
Remove from oven and transfer the seafood to a platter
Garnish with parsley
Serve immediately with any number of sides, crusty bread and a fresh spring salad
Serve with a nice dry white wine

I love this dish with a simple egg noodle side loaded with parsley and grape tomatoes, or a pesto linguine,Enjoy!
