Sicilian Summer Vegetable Stew
It’s summer and organic home grown heirloom tomatoes, zucchini, parsley and basil, chard and kale are abundant! Even though it is quite warm this summer, my Sicilian Summer Vegetable Stew is a perfectly light supper filled with nutritious organic vegetables, flavored with organic aromatic basil and parsley! My Sicilian Summer Vegetable Stew can be complimented with a side of Italian sausage, grilled chicken or fish! Served alone warm, cold or at room temperature. My Sicilian Summer Vegetable Stew is a perfect summer supper solution!! I make it fresh several times a month in the hot summer months and we just never get tired of eating it!
2-3 medium sweet organic onions, peeled and chopped
3-4 organic garlic cloves, peeled and chopped
3-5 medium organic zucchini,cut in chunks
6-7 organic potatoes, unpeeled and quartered
4-5 ripe organic heirloom tomatoes, chopped
1-2 large bunches of organic basil,roughly chopped
1-2 large bunches of organic flat leaf parsley, roughly chopped
1 large bunch organic swiss chard or kale , roughly chopped
extra virgin olive oil and a bit of water
1 teaspoon pink salt
1 teaspoon veggie pepper, Frontier
large dash of red pepper flakes
Place all ingredients in a large stainless steal pan
Cook at medium high on stove top for about 10 minutes
Reduce to simmer for another 20 minutes
Serve it with pasta, rice or just eat it as is. it is a nutritious medley of the best of summer vegetables; add a side of Italian sausage or a can of French or Brisling sardines to complete the summer meal! Enjoy!!
