Saffron Quinoa
Quinoa is the ancient Inca grain that is the most nutritious of all grains. Quinoa is high in fiber, gluten free, full of amino acids and iron with a delicious nutty flavor and an incredibly light consistency! My Saffron Quinoa is a side dish and a salad and goes with just about any entree. I served this dish recently with sautéed chicken thighs and chard and it was such a hit that there was nothing left! Saffron Quinoa is just a delicious, nutritious and versatile recipe enhanced with flavorful saffron and fresh organic vegetables and goes with everything! Enjoy!!
2 cups salted water
1 cup quinoa
Pinch of saffron threads
1 small red onion, chopped
1 bunch flat leaf parsley, roughly chopped
1 small cucumber, chopped
12 grape tomatoes, cut in half
3 tablespoons olive oil
Salt and pepper to taste
1 teaspoon zaatar
Zest and juice of 1/2 lemon
Bring the salted water to a boil
Add the quinoa and the saffron
Bring to a boil then reduce to a simmer until all water is absorbed
Remove from heat, rest for 5 minutes the fluff with fork
In a large mixing bowl combine the quinoa with the chopped vegetables, olive oil and seasonings
Add the lemon zest and juice
Mix gently and transfer to a serving dish
Serve with chicken, pork or beef or serve as or with a vegetarian entree
