rigatoni and roasted squash with sausage and sageA simple pasta dish just loaded with nutritious butternut squash, peppers, onions and garlic. Chunks of Italian sausage from our local co-op and aromatic sage and creamy goat cheese complete the dish, combining protein, carbohydrates and healthy fats for a super nutritious and especially delicious dinner! Rigatoni and Roasted Squash with Sausage and Sage is a simply natural gourmet favorite! Serve with a crisp white wine!

1 Lb Italian sausage links cut in 1/2 inch lengths( look for heritage pork or chicken)
1 butternut squash, peeled and cut up in chunks
1 sweet onion, peeled and roughly chopped
Assorted peppers, sliced( pasillo, banana,sweet)
3 garlic cloves, peeled and sliced
1/2 cup fresh whole leaf sage, roughly chopped
1/4 cup olive oil
Salt and pepper to taste
8 ounces rigatoni pasta, cooked al dente
4-5 ounces soft goat cheese

Preheat oven to 425 degrees Fahrenheit
Arrange sausage, vegetables and sage on a large rimmed baking sheet
Dredge with olive oil, toss to coat
Season with salt and pepper
Roast for 25 minutes until sausage is cooked through and vegetables are browned, remove from oven
Meanwhile cook rigatoni pasta in well salted water until al dente, drain
Add the pasta to the tray and combine
Add the goat cheese and gently mix
Correct seasoning if needed
Transfer to a large serving dish
Garnish with whole basil or sage leaves
Serve immediately with a fresh green salad and a crisp white wine
