Renew your body while enjoying my Red Lentil Vegetable Dal, a delicious nutrient rich vegetable stew. Delicious served over aromatic basmati rice and topped with flavorful organic cilantro!

1/4 cup extra virgin olive oil

1 generous teaspoon cumin

1 generous teaspoon turmeric 

1 generous tablespoon Vindaloo curry powder

Himalayan pink salt and black pepper to taste

1 large organic onion, peeled and chopped

4-6 organic garlic cloves, peeled and minced

1 inch fresh organic ginger, peeled and minced 

2 organic sweet potatoes or yams, peeled and chopped

1 organic red or yellow sweet pepper, chopped 

1/3 lbs fresh organic spinach leaves

1/3 lbs fresh organic Swiss chard leaves

2 organic tomatoes, chopped

32 ounces no salt broth, chicken or vegetable

1&1/2 cups red lentils, rinsed

2 cups water

Organic chopped cilantro for garnish

In a large stock pot, heat olive oil to medium high 

Add curry, cumin and turmeric, stir

Add onion, salt and pepper, stir 

Add garlic and ginger, stir

Add sweet potatoes, bell peppers, tomatoes and broth, stir

Add lentils and water, reduce to simmer and stir

Add spinach and chard, stir

Add more salt and pepper, if needed

Simmer stew for 25-30 minutes

Remove from heat and let rest for 10 minutes 

Serve my Red Lentil Vegetable Dal over aromatic basmati rice topped with organic chopped cilantro, Just Delicious!
