Ravioli with Fried Squash and Herbs
My Ravioli with Fried Squash and Herbs is a summer supper that is so easy to prepare by using ready made ravioli from the Deli shelf; then married with a super easy medley of organic summer squash, organic garlic scapes, organic parsley and basil! It takes as little as 20 minutes to prepare this flavorful and nutritious dish for a quick summertime supper! Enjoy my Ravioli with Fried Squash and Herbs with a fresh green salad and a glass of Vinho Verde or craft beer!
1 package of prepared ravioli of your choice( I like spinach and artichoke)
1/4 cup extra virgin olive oil
1/2 cup chopped organic garlic scapes
1 medium large organic summer squash or zucchini, sliced
2 tablespoons garlic pepper sauce(DeLallo)
3 tablespoons tomato brushetta(DeLallo)
1/2 bunch organic flat leaf parsley, roughly chopped
1 bunch organic basil, roughly chopped
Large splash of white wine
Salt and pepper to taste
In a large chef’s pan or skillet, heat the olive oil to medium high
Add garlic scapes, cook until softened
Add the squash and brown
Add both sauces
Add the chopped herbs, wine, salt and pepper
Lower temperature to simmer
Simmer until cooked through, about 5 minutes
In the meantime cook the ravioli in a pot of boiling water with a splash of olive oil about 3 minutes, then drain
Add the cooked ravioli to the skillet and mix gently
Add extra wine if needed to keep the dish moist
