Free Range Spring Chicken or Poussin.

My Poussin Au Tagine is a great way to cook free range spring chicken, also known in Europe as poussin! The delicate, tender and lean meat cooks like chicken, just a lot quicker! These are a bit smaller than Cornish game hens found in your local grocery store. Luckily, you can purchase free range poussin online and I highly recommend them; they are sweet, tender and each poussin is just enough for an individual serving! If you don’t have a tagine, a covered chef’s pan will work for this dish but a tagine, with its conical cover allows for quickly cooking the poussin while keeping it moist and tender! I use both French and Middle Eastern spices and lots of lemon to season the poussin. Serve my Poussin Au Tagine with rice or orzo, and a green salad and dry wine. Enjoy this delicious dish!

1/4 cup extra virgin olive oil, divided

1 organic onion, peeled and sliced

1-2 free range poussin (D’Artagnan online

1 organic lemon, cut in half, cut the second half in quarters

Himalayan salt, pepper

1/2-1 teaspoon organic Tagine seasoning(Frontier)

1/2-1 teaspoon organic herbes de Provence 

1/4-1/2 cup of dry white wine

1 organic carrot, sliced 

3-4 stalks organic celery, chopped

1/4 cup quartered artichoke hearts

1/4 cup green pitted olives

Wash and pat dry the poussin, rub with salt, pepper, both seasonings and half of the oil, tuck 1/2 lemon in the cavity of the poussin 

Heat the remainder of oil in a tagine or chef’s pan to medium high

Add the onions and sauté 

Place the poussin in the pan and brown all over

Add the wine then reduce temperature to medium simmer

Add the carrots, celery, and quartered lemon, cook until vegetables are tender then reduce to low simmer and add the artichokes and olives

Cover with lid and simmer for 30 minutes

Remove lid occasionally and rotate the poussin

Cut the poussin in half if you would like and place the cut side down

Add water if necessary to keep moist

When cooked through, remove from heat and leave lid on for 10 minutes

Serve my Poussin Au Tagine with orzo or basmati rice

Enjoy this dish with a bright green salad and dry wine of choice!
