Potato Leek Galette with Organic Greens.
I love puff pastry encased in savory nutritious vegetables to create a delicious galette! This time I have combined lots of organic leeks, in season right now, golden potatoes and healthy organic greens seasoned with classic spices and enriched with two cheeses in a stunning presentation that is not only delicious but very healthy! Enjoy my Potato Leek Galette with Organic Greens with a dry wine and leafy green salad.
2 tablespoons butter, room temperature
1 puff pastry, thawed
1/4 cup extra virgin olive oil
6-8 organic leeks, sliced white and green parts
1 organic golden potato, unpeeled and thinly sliced
3-4 cups organic greens, roughly chopped(chard, spinach, kale or collards or a mix)
1 teaspoon herbes de Provence
Salt and pepper to taste
Good splash of sherry
3/4 cup gouda or edam cheese, shredded
5 ounce goat cheese
Heat olive oil to medium hot in a skillet
Add the leeks, potato slices and spices
Stir cook until vegetables are browned
Add the greens and stir cook for a few more minutes until wilted
Stir in the sherry, cover pan and set aside
Pre heat oven to 350 degrees Fahrenheit
In the meantime, roll out the puff pastry on wax paper
Spread the bottom of a pie plate or soufflé pan with half of the butter
Lay the rolled out pastry in the plate leaving excess pastry hanging over the pan sides
Coat the bottom of pastry with 1/2 cup shredded gouda or edam cheese
Now fill the pastry with the vegetable mixture and mix in the goat cheese
Tuck the excess hanging pastry around the exterior of the filled pastry
Coat the exposed pastry with remaining butter
Top the exposed vegetables with remaining shredded gouda or edam cheese
Pop into the preheated oven and bake for approximately 1 hour and 5 minutes until galette is golden brown.
Serve with a leafy green salad and dry wine and enjoy!
