A traditional pot of beans welcomes the New Year for many groups of people throughout the world! Here are two simply delicious, healthy and easy to prepare bean salads to celebrate the the 2015 New Year!!
Ayocote Bean Salad
A simply fabulous bean salad starring heirloom ayocote runner beans and simple
vegetables in a white balsamic vinaigrette! These beans are sensational!
1/2 lb ayocote runner beans, cooked and drained(Rancho Gordo)
1 pint organic grape tomatoes
1 bunch cilantro, roughly chopped
1 large orange or red bell pepper
1 large red onion, peeled and sliced
Salt to taste
Dash of Aleppo pepper flakes
1/4 cup extra virgin olive oil
1/4 cup white balsamic vinegar
In a large pot bring beans to a boil with bay leaves and aromatics such as garlic
and onion
Simmer for a couple of hours until beans are tender, drain and transfer to a large
mixing bowl
Add tomato, onion and bell pepper
Add salt and Aleppo
Add oil and vinegar, mix gently
Transfer to a serving bowl,serve at room temperature
Enjoy!
A quick and easy pantry bean salad enhanced with middle eastern flavor and flair!
1 can organic fava beans, drained(Westbrae)
1 can organic garbanzo beans, drained(Westbrae)
1 pint organic grape tomatoes
1 seedless cucumber, cut up
1 cup celery, chopped
1 bunch flat leaf parsley, roughly chopped
1 medium red onion, peeled and sliced
1/2 cup pitted kalamata olives
2 teaspoons za-atar seasoning
Salt and pepper to taste
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
In a large mixing bowl, combine all ingredients
Mix thoroughly
Transfer to a serving dish, enjoy!
Delicious as a side for lamb of poultry
