Minted Roasted Cauliflower with Green Beans and Tomatoes
A simply delicious late summer warm salad featuring seasonal organic vegetables from our local CSA farm or garden, punched up with mint, sherry vinegar, Greek olives and Gorgonzola cheese! My Minted Roasted Cauliflower with Green Beans and Tomatoes is a stand alone warm vegetarian entrée; a perfect side dish that compliments a variety of grilled meats; a lovely warm or room temperature salad! This organic vegetable dish is versatile! Roasting cauliflower with a bit of olive oil and pepper mellows it’s flavor but first you need to boil the cauliflower in heavily salted water for just minutes! Let me show you how. Our green beans are so flavorful and tender this time of year and the heirloom tomatoes shine!
1 whole organic roasted cauliflower (see note for preparation), cut up
2 lbs organic green beans, steamed
2-3 sprigs fresh mint, leaves removed from stems and chopped
2 heirloom tomatoes, quartered
1/4 cup pitted Greek olives
1/4 cup crumbled Gorgonzola cheese(feta will also work)
A good splash each of extra virgin olive oil and sherry vinegar
Salt and pepper to taste
Note: to prepare the cauliflower bring 6 cups of water to a boil in a stock pot
Add 1/2 cup kosher salt
Trim leaves from cauliflower
Boil the cauliflower for 5 minutes only in the salted water
Drain in a colander for about 15 minutes
Place cauliflower on a baking sheet or in a caste iron pan
Drizzle with olive oil and sprinkle with pepper
Roast cauliflower in a preheated oven at 450 degrees Fahrenheit for 30 minutes
Or until the cauliflower is nicely browned
Remove from oven and let rest for 10 minutes
In the meantime steam up the green beans in salted water and drain
In a large serving bowl combine the cut up cauliflower, green beans, mint and quartered heirloom tomatoes
Add in the Greek olives and crumbled cheese
Splash with olive oil and sherry vinegar
Salt and pepper if needed
Toss and serve
