Mediterranean Harvest Vegetable StewWe are moving into the season of Autumn, but there are so many late Summer crops being harvested now; they beg to be made into soups, stews, casseroles and more… My Mediterranean Harvest Vegetable Stew is a delicious and super nutritious vegetarian stew made with cassoulet beans to add protein and an assortment of freshly harvested late Summer vegetables like tomatoes, zucchini, eggplant, squash and savoy cabbage…seasoned with Mediterranean spices and punched up with lemon rind and juice! My Mediterranean Harvest Vegetable Stew is a healthy stand alone vegetarian stew but can be modified by adding in a protein of choice. I’m keeping it vegetarian. I added a bit of parmesan cheese for serving, but that is optional; omit it if you want a completely vegan stew and Enjoy!

1/4 cup extra virgin olive oil

1 large organic onion, peeled and chopped

2 large organic garlic cloves, peeled and sliced

1&1/4 dried cassoulet beans, Rancho Gordo is good

1 organic green pepper, chopped

1 organic hot red pepper, seeded and chopped

1 cup chopped organic fennel

1 cup chopped organic celery

6 organic summer squash, zucchini and yellow, large dice or sliced

1 large organic eggplant, large dice

6 ripe organic tomatoes, cut up

5 cups boiling water

Generous Himalayan salt and ground pepper, be generous

1 tablespoon each of dried basil, thyme, savory, oregano

Rind and juice of 1 organic lemon

1 bunch organic parsley, roughly chopped

1 pint organic cherry tomatoes, leave whole

1 organic savoy cabbage, cut in wedges

Extra water and adjust seasoning if needed

In a large stockpot heat olive oil on medium high 

Add onion and garlic, sauté for a few minutes

Add the next 8 ingredients, beans included, sauté for a few minutes

Add the boiling water, seasonings, lemon rind and juice

Bring to a boil then lower to simmer

Stir in the parsley, cherry tomatoes and cabbage

Add extra water and adjust seasoning if necessary

Simmer for 1+ hours until beans are tender

Serve alone in deep bowls or with rice or short pasta

Serve with grated parmesan cheese, optional
