Lemon Tahini Potato Salad with Avocado and Cucumber.
Enjoy my Lemon Tahini Potato Salad with Avocado and Cucumber this Memorial Day and throughout the summer! It is an absolutely delicious and super nutritious variation of a traditional salad to accompany summer grilling or to enjoy as a vegetarian main! Lemon Tahini dressing is very easy to make (recipe below), and when combined with yogurt, organic avocado and a few choice spices, makes a wonderful dressing for the organic potatoes and other vegetables in my Lemon Tahini Potato Salad with Avocado and Cucumber. I add hard boiled eggs to the salad for a boost of protein, but you can choose to leave them out and also use a non dairy yogurt for a vegan version. My personal choice is to add the eggs and use organic yogurt for a most delicious summer potato salad! Enjoy!
Lemon Tahini Dressing:
In a blender combine 1/4 cup tahini, 1/2 cup water, 1/4 cup lemon juice, 1 teaspoon minced or dried garlic, salt and pepper to taste, 2 tablespoons olive oil and 1 teaspoon maple syrup. Blend until smooth, transfer to a storage jar and use in salads and the potato salad below!
Assemble the potato salad in a large mixing bowl:
10-12 organic golden potatoes, peeled and cut in chunks, then boiled until done
1-2 organic green onion, chopped
2-3 organic cucumbers, chopped
5-6 organic colored baby bells, cut up
1&1/2 organic avocados, 1 cut up and reserve the 1/2, sliced for the top
3 free range hard boiled eggs, 2 cut up and reserve 1, quartered for the top
1 teaspoon purple shallot powder, Burlap and Barrel
1 teaspoon dried harissa seasoning, plus a sprinkle for top, Frontier
Himalayan salt and pepper to taste
2 tablespoon dried organic parsley flakes
3/4 cup Lemon Tahini Dressing
3/4 cup organic yogurt
Gently mix together and adjust seasonings if necessary
Transfer to a serving bowl and top with reserved sliced avocado, quartered boiled egg and a sprinkle of dried harissa seasoning
