A classic Lebanese one pot meal of lamb, tomatoes, aromatic vegetables and spices! Traditionally served with seasoned middle eastern flat bread and equally delicious served with basmati rice, couscous or orzo. I have taken the liberty of simplifying the traditional step by step procedures of preparing this dish by layering the ingredients. It’s table ready in less than 45 minutes and that’s just simply natural gourmet!!
Mix together:
1 Lb ground lamb
1 Tablespoon Ras el Hanout seasoning
1 Tablespoon dried parsley flakes
1 Tablespoon dried mint
1 egg
1/2 cup panko bread crumbs
Salt and grains of paradise pepper to taste
Form mixture into small patties, around 12 or so
1/4 cup olive oil
1 Tablespoon tomato paste
1 can diced organic tomatoes
1 onion, peeled, quartered and sliced
4 garlic cloves, peeled and sliced
1 Tablespoon Ras el Hanout seasoning
1 bunch parsley, roughly chopped
1 large tomato, sliced
Salt and grains of paradise pepper to taste
In a large oven proof skillet, heat olive oil and fry the lamb patties until brown on both sides
Add garlic, onion, tomato paste and diced tomatoes
Add Ras el Hanout, salt and grains of paradise
Continue to cook until slightly thickened
Mix in parsley, top with tomato slices
Pop into a preheated oven of 400 degrees Fahrenheit
Bake for 25 minutes
Serve with seasoned flat bread, middle eastern bean salad( recipe follows) and a dry red wine! Enjoy!!
Middle Eastern Bean Salad
A simple, delicious and very nutritious salad just filled with fiber, protein, vitamins, minerals and flavor!
In a large bowl mix together:
1 can organic fava beans(Westbrae)
1 can organic garbanzo beans
1 bunch flat leaf parsley, roughly chopped
1/2 pint organic grape tomatoes
1 medium red onion, peeled and sliced
1 cup chopped celery
1 medium cucumber, diced
3 Tablespoons olive oil
3 Tablespoons white wine vinegar
Fresh ground salt and pepper to taste
Transfer to a serving bowl and enjoy with Lebanese lamb patties and zaatar seasoned flat bread!! Just delicious!
