          Kelp Noodle & Sesame Ginger Shrimp Salad

Such a simple and healthy medley of organic field greens or spring mix, mineral rich seaweed noodles and simply boiled shrimp doused with a toasted sesame ginger dressing!
Easy as one, two, three……..

 

1 large package of organic spring mix greens or field greens
1/2 tablespoon old bay seasoning
1/2 lb of frozen raw shrimp, deveined and shelled, thawed
1/2 package of sea kelp noodles, Sea Tangle Noodle Company
1 large avocado, peeled and sliced
1 cup red and yellow bell pepper, sliced
1 bunch cilantro, roughly chopped
1 bunch scallion or spring onion, sliced
2 teaspoons of sesame ginger seasoning, Victoria’s Gourmet is good
1/2 cup rice vinegar
2 Tablespoons grape seed oil
2 Tablespoons toasted sesame oil
1 Tablespoon tamari sauce or soy sauce
1 Tablespoon honey
Dash of Aleppo pepper

Fill a medium shallow pan with salted water and the old bay seasoning
Add the shrimp and bring to boil for 4-5 minutes or until shrimp are pink
Drain cooked shrimp and cool, set aside

In a small bowl mix together the seasoning,oils, vinegar, tamari, honey and pepper, set aside

Combine salad greens with the bell pepper, avocado, onions and cilantro
Cut up the long strands of kelp noodles and combine with greens
Add the cooled cooked shrimp
Add the dressing and gently toss
Top with an extra tangle of kelp noodles and a sprinkle of cilantro
That’s it! Just Delicious!
Serve with a Riesling wine!
