Italian Slow Cooker Beef Stew with Gnocchi.
Grass fed beef and a plethora of organic vegetables all from our CSA farm got thrown into my slow cooker for the most scrumptious and healthy stew, just perfect for these chilly days ahead! My Italian Slow Cooker Beef Stew with Gnocchi is filled with aromatic vegetables, earthy mushrooms, herbs and spices. It is slightly thickened with a package of prepared gnocchi, so there is no need to add flour or any other thickening agent! Easy to prepare and so nutritious; enjoy my Italian Slow Cooker Beef Stew with Gnocchi throughout the Fall and Winter seasons!
1 package free range, grass fed stew meat
(Season the beef with a medley of garlic and cumin powders, salt and pepper, Aleppo pepper flakes, umami mushroom seasoning(frontier) and a splash of balsamic vinegar, set aside to marinate)
1/4 cup extra virgin olive oil
1 organic onion, peeled and quartered
3-4 organic garlic cloves, peeled and cut in half
1 organic leek, large cut
A handful each of fresh basil leaves, parsley leaves and sage leaves
1/2 cup wine
1 small organic red kuri squash, seeded and cut in quarters
1 organic hot pepper, cut in half
Several organic sweet baby bell peppers
3-4 organic golden potatoes, scrubbed and cut in half or quarters
1 organic red beet, scrubbed and cut in quarters
3-4 organic carrots, scrubbed and large cut
1 organic zucchini, large cut
2-3 stalks organic celery, large cut
3 cups assorted organic mushrooms
4 ripe organic tomatoes, cut in quarters
2 tablespoons porcini mushroom powder
Salt and pepper to taste
1 cup+ water
1 package prepared gnocchi
In skillet or the insert of slow cooker, heat the oil to medium high
Add the marinated beef, onion, garlic, leek and herbs
Stir until meat is browned, them add the wine
If not already in the slow cooker insert, transfer to the insert
Place the insert into the slow cooker
Add next 10 vegetable ingredients
Stir in the porcini powder, salt and pepper and top with water( the water should be midway)
Program the cooker for 7 hours
When there are 3 hours left of cooking time, stir in the gnocchi
Slow cook for the remaining 3 hours, turn off cooker and let rest
