Harissa Lamb
My Harissa Lamb Loaf is just as much a vegetable loaf as it is a meat loaf! This meat and vegetable loaf is loaded with chopped organic vegetables, tomatoes, aromatic spices, feta cheese and of course organic ground lamb held together with farm fresh eggs and light panko breadcrumbs. My Harissa Lamb Loaf is truly a vegetable forward meat loaf that is vitamin, mineral and protein rich and full of Mediterranean flavor! You can serve my Harissa Lamb Loaf with a delicious combination of jasmine rice and fava beans, a bed of organic orzo or a simple mash of potato and winter squash! Serve this delicious loaf with a crisp green salad and a dry wine of choice! Enjoy!
1pound organic ground lamb( or ground beef or turkey) best with lamb
1 large organic onion, peeled and chopped
2 organic carrots, shredded
1 small organic fennel bulb, sliced
1 organic red pepper, chopped
1 organic sweet potato, shredded
2 organic heirloom tomatoes, chopped
1 bunch organic flat leaf parsley, finely chopped
1/4 cup crumbled feta cheese
2 farm raised eggs, beaten
3/4 cup panko breadcrumbs
1 tablespoon dried organic harissa seasoning, Frontier
1 teaspoon dried organic garlic granules
1 teaspoon dried organic cumin powder
1 teaspoon dried organic oregano flakes
Himalayan salt and ground pepper to taste
A drizzle of extra virgin olive oil for bottom of baking dish and top of loaf
1/4 cup panko breadcrumbs seasoned with 1 tablespoon zaatar seasoning
Preheat oven to 375 degrees Fahrenheit
Coat an ovenproof baking dish with a drizzle of olive oil
In a large mixing bowl, combine all the ingredients except the final drizzle of olive oil and 1/4 cup seasoned panko breadcrumbs, mix thoroughly
Form the loaf in the baking dish
Top with the seasoned panko breadcrumbs
Drizzle with olive oil
Bake uncovered for 1 hour on bottom rack
then increase oven temperature to 425 degrees Fahrenheit
Bake for another 20 minutes on middle rack until top of loaf is browned
Remove from oven, let rest
Slice the loaf, serve with side of your choice, a crisp salad and dry wine
