Florentine Tortellini Tuna Salad

A quick and easy salad made with all things pantry and a few organic vegetables just to round it out! Protein rich and full of nutrition, my Florentine Tortellini Tuna Salad is a great summertime pasta salad recipe for your next cook out or summer celebration; it is sure to be a keeper! Enjoy this super easy to prepare salad on a hot summer day with a craft beer or chilled white wine!

8-10 ounce package of spinach ricotta tortellini(I like DeLallo brand)

3/4 can artichoke hearts, drained and roughly chopped

1 can cannellini beans, drained and rinsed

2 cups chopped fresh organic spinach

1 can olive oil packed tuna, slightly drained then flaked

2 roasted red bell peppers, chopped

1 teaspoon or to taste ground black pepper(Frontier veggie pepper is good)

1 heavy tablespoon dried oregano

A good dredge of extra virgin olive oil( about 3 tablespoons)

Lemon juice to taste(be generous)

Cook the tortellini per package instructions in well salted boiling water

Drain and let cool slightly

In the meantime, mix the next 7 ingredients in a large bowl

Add the tortellini and mix gently

Add the oil and lemon juice, mix well

Serve my Florentine Tortellini Tuna Salad at room temperature or cold 

Pair it with a cold beer or chilled wine and Enjoy!
