Filet Mignon with Lemony SabziThis is a super simple summer supper that I am sure you will make time and again! Grilled or pan fried Filet Mignon with Lemony Sabzi is ready in minutes! Sabzi is an Afghan stew of greens simmered with spices and lemon juice. The Filet Mignon is, of course, grass fed. Marinate the beef in aromatic spices and olive oil then panfry or grill it, slicing it as it cooks. Cut up an assortment or organic greens including parsley and cilantro seasoned with traditional afghan spices and olive oil. Sauté these greens in a shallow pan with water and lemon juice, cook until tender. Arrange the beef on top of the greens for the last few minutes of cooking time. Serve my Filet Mignon with Lemony Sabzi over rice or orzo or just on it’s own! Enjoy!

For the filet mignon:

Marinate in olive oil, cumin seeds, garlic, salt and pepper

PanFry it in just minutes, slicing it as it cooks(optionally you can grill it)

For the Sabzi:

Sauté chopped organic garlic scapes or chopped garlic in olive oil

Add two bunches of assorted organic greens like Swiss chard, collards, or dino kale and 1/2 bunch each of chopped organic cilantro and parsley

Season the greens with dill, coriander powder, fenugreek powder, salt and pepper

Reduce to simmer and add water and lemon juice

Cook until almost tender

Top with the cooked slices of beef and simmer for a few more minutes

Cover and let rest

Serve my Filet Mignon with Lemony Sabzi in shallow bowls on its own or serve over basmati or jasmine rice or orzo if desired. Enjoy with a dry wine of choice.
