Festive Winter Posole
[skill percentage=”90″ title=”Photoshop & Illustrator 90%”]My Festive Winter Posole is a vegetable forward version of a classic south of the border dish filled with a colorful assembly of organic winter and late summer vegetables, ripe organic tomatoes, aromatic alliums, spices and herbs! Shredded cooked meat of your choice can be added or not! The main star of my Festive Winter Posole is, of course, the prepared hominy from Rancho Gordo that has been soaked, then cooked in an aromatic broth. Add this to the organic vegetable/ meat medley and you have created a festive, healthy and nutritious posole, perfect for the holidays!
A splash of lime juice brightens the dish! Serve with chopped avocado and cilantro; chopped red onion and radishes for crunch and color; add shredded cotija cheese if you like!
1 lb prepared hominy white corn Posole from Rancho Gordo
Soak hominy for 6 hours, drain and rinse
Add hominy to a large pot of water
Add 2 dried chili d’arbol, 1 chopped onion, 1 tablespoon oregano Indio, splash of olive oil
Bring to a boil, then simmer for 2 hours
In a large stockpot combine
2 cups shredded pork or chicken(optional)
2+ cups of water or broth
8 cloves organic garlic, peeled and sliced
1 large organic onion, peeled and chopped
2 organic leeks, chopped
1 medium organic Savoy cabbage, cored and cut up
1/2 bunch organic Tuscan kale, chopped or other sturdy green(collards or chard)
3-4 ripe organic tomatoes, chopped
1/2 pint organic grape tomatoes
2 heavy tablespoons chili powder(Rancho Gordo)
2 heavy tablespoons oregano indio(Rancho Gordo)
1/2 bunch organic flat leaf parsley, roughly chopped
4 medium organic carrots, chopped
2-3 organic sweet red and yellow baby peppers, sliced
2 organic golden beets, chopped
1 small organic fennel bulb, chopped
Salt and pepper to taste
A splash of organic lime juice,reserved
Bring this mixture except the lime juice to a slow simmer while the hominy is simmering in the other pot
When the hominy is done, add it with its aromatic broth to the vegetable/ meat pot
Continue to simmer for a few minutes, correct seasoning if needed and add the splash of lime juice
Serve my Festive Winter Posole with chopped avocado, radishes, red onion and cilantro! Some enjoy it with a bit of shredded cotija cheese.
