Linguine with Tuna, Spinach & Lemon
This is an absolutely delicious summer pasta dish and very easy to prepare making use of pantry supplies and fresh and healthy spinach! Alternatively, try arugula in place of the spinach. Use fresh lemon and plenty of fresh garlic!
1 lb Linguine
1/2 cup olive oil
zest of 2 lemons, juice of 2 lemons
1 head of garlic,peeled and minced
1/2 tsp crushed red pepper
2 cans water packed albacore tuna ,drained
2 cans olive oil packed tuna, undrained
4-6 cups baby spinach
fresh ground salt & pepper to taste
Cook linguine in a large pot of salted water until al dente
Meanwhile heat the olive oil in a very large skillet on medium high
Add minced garlic and rushed red pepper and sauté for 2 minutes
Lower heat and add tuna, lemon juice and lemon zest
Drain linguine and reserve 1 cup cooking liquid
Add linguine and spinach to skillet, toss gently
Add reserved cooking liquid to desired consistency
Transfer to a shallow serving dish and serve immediately
Delicious with a tossed salad, crusty bread and a light white wine! Enjoy!
