Easy Savory and Spicy Pesto.
My Easy Savory and Spicy Pesto is made with both organic arugula and organic radish greens for a super spicy flavor! I use the traditional pine nuts, olive oil, lemon juice, garlic, salt and pepper to round out the spiciness of the greens. This pesto recipe makes more than a full quart of nutritious and delicious sauce to top off pasta, blend into risotto, make into dips or to put into yummy casseroles as a flavor enhancer! My Easy Savory and Spicy Pesto is a versatile topping or sauce: enjoy using it an a variety of dishes, the possibilities are endless!
The green tops of two bunches of organic radishes, washed and chopped
3 cups of organic arugula, washed and chopped
3/4 cup extra virgin olive oil
3/4 cup lemon juice
2-3 teaspoons organic chopped garlic
1 cup pine nuts
Salt and pepper to taste
Water if needed for thinning
You may have to make this in batches depending upon the capacity of your food processor.
Put all the ingredients in a food processor and blend into a smooth sauce
Add water if necessary to thin
Store in a mason jar
Use in a variety of dishes
