Double Coriander Potato Salad

double coriander potato saladI call this my double coriander potato salad as I use both the fresh cilantro leaves of the coriander plant and dried roasted coriander root powder to make a delicious, bright tasting summer potato salad. Adding garbanzo beans to the golden potatoes for additional fiber and protein make this double coriander potato salad a classic East Indian dish; adding fresh crisp organic vegetables enhances the nutritional value of this delicious potato salad.  The dressing of Greek yogurt, lemon juice, dried mustard and plenty of roasted ground coriander root, along with lemon zest and capers, bring bright and unique flavor to my double coriander potato salad!  Enjoy with grilled tandoori chicken breast or seafood!

An unoaked Chardonnay, Sauvignon Blanc or an Indian pale ale all pair well with this fabulous summer meal!

2-3  lbs Yukon gold potatoes,peeled and cut up
1 can garbanzo beans, drained
1 large spring onion with green part, chopped ( or one bunch scallions)
1 red bell pepper, chopped
1 cup green beans, chopped
6 radishes, sliced
1 large carrot, thinly sliced
1 cup celery, chopped
1 yellow squash, sliced
1 large bunch cilantro, roughly chopped
Lemon zest from one lemon
2 tablespoons capers
1/4 cup olive oil
1 cup plain Greek yogurt
3 tablespoons roasted ground coriander root
1 tablespoon dried mustard
Juice from 1 lemon
2 teaspoons grey salt
Ground pepper
1/2 teaspoon Aleppo pepper flakes
4 hard boiled eggs, cut in half
Lemon slices for garnish
Dash of Harissa powder for garnish

Boil the potatoes in well salted water, drain and set aside
In a large mixing bowl, add all cut up vegetables
Add the potatoes, cilantro, lemon zest and capers
Mix gently
In a separate bowl whisk  together the olive oil, yogurt,seasonings and lemon juice
Add the dressing to the potato mixture and mix gently
Transfer the potato salad to a large shallow serving plate
Garnish with lemon slices, hard boiled eggs and sprinkle with Harissa powder
Serve with chicken or seafood, a dry white wine or Indian pale ale
