A quick and easy potato salad with robust flavor, perfect with grilled fish,chicken or lamb! One of two Delicious & Healthy summer Potato Salads!

 

6-8 red skin potatoes, unpeeled, quartered and boiled

1 seedless cucumber, cut up

1/4 cup pitted kalamata olives

2 organic tomatoes , quartered

2 ounces feta cheese, cubed

Fresh ground chophouse seasoning, Frontier

Fresh mint, roughly chopped

1 teaspoon dried oregano

Olive oil and red wine vinegar

In a large mixing bowl, combine all ingredients and mix gently

Transfer to a serving bowl or platter

Serve with a grilled entrée of fish, chicken or lamb

Simply wonderful!!!

This dish is packed with vitamins and minerals from artichokes, peppery arugula, cilantro, chives and onions, brightened with capers, lemon and sherry vinegar and lightly dressed with a homemade aioli of egg yolks and olive oil! This salad is gluten free and delicious! One of two Delicious & Healthy summer Potato Salads!

My Four Bean Potato Artichoke Salad is so good and so good for you! Enjoy with any grilled entrée!

 

1 cup steamed green beans, cut in 1 inch pieces

1 can garbanzo beans, drained and rinsed

1 can kidney beans, drained and rinsed

1 can butter beans, drained and rinsed

1 jar marinated artichoke hearts, with marinade

3 lbs boiled golden potatoes, cut up

1 red onion, quartered and sliced

1 red bell pepper, sliced

1 bunch green onion, chopped

1 cup chopped fresh chives

1 bunch cilantro, roughly chopped

2 cups baby arugula, chopped

2 tablespoons capers, drained

Zest and juice of one lemon

Several sprigs of fresh oregano, chopped

1 tablespoon dried dill

Chophouse seasoning to taste, Frontier

Salt and Aleppo pepper to taste

A good sprinkle of sweet paprika

Dash of Spanish sherry vinegar

3/4 cup blended grape and olive oils

2 egg yolks

In a large mixing bowl combine all ingredients except the oil and egg yolks

In a small mixing bowl blend together the oil and egg yolks until slightly thickened

Add the aioli to the salad and gently mix together

Adjust seasonings and vinegar to taste

Transfer to a large serving bowl or platter Enjoy!!!
