My Curried Potato Salad with Spinach and Mint is filled with healthy organic potatoes and protein rich garbanzo beans to make a perfect vegetarian protein! My Curried Potato Salad with Spinach and Mint is loaded with organic spinach, organic whole peas, organic carrots, organic cucumber and organic mint all harvested from our local CSA farm Seeds&Spores Family Farm in Marquette, Michigan. My Curried Potato Salad with Spinach and Mint is all dressed up with a delicious curried yogurt lemon dressing, zapped with pimento stuffed olives,then garnished with Aleppo pepper flakes, organic pea shoots and organic avocado wedges! My Curried Potato Salad with Spinach and Mint is one delicious and “good for you” potato salad that will be a perfect accompaniment to any grilled fare. I serve it with grilled tandoori chicken breasts. Just yummy with a good Chardonnay or local craft beer! Enjoy!

6-8 organic potatoes, cut up and boiled

1 can garbanzo beans, drained

1&1/2 cup organic spinach leaves

1/2 cup fresh whole pea pods, cut in half

4-5 organic carrots, sliced diagonally

1/2 cup organic fresh mint, roughly chopped

1 organic cucumber, sliced in rounds

1/4 cup Spanish olives with pimento

1 teaspoon + curry powder, vindaloo from frontier is good

3/4 cup Greek yogurt

2 teaspoons lemon juice

Aleppo pepper flakes

Salt and pepper to taste

Organic pea shoots as garnish

1 organic hass avocado, cut in wedges as garnish

In a large mixing bowl combine the potatoes and all the vegetables, mint and olives,

toss gently

In a small mixing bowl combine the yogurt,curry and lemon juice

Add to the vegetable mixture

Season with salt and pepper

Transfer to a serving bowl and garnish with Aleppo, avocado and pea shoots
