                                   Cumin Scented Rosemary Turkey.

Cumin Scented Rosemary TurkeyMy Cumin Scented Rosemary Turkey is a simple roasted turkey recipe full of flavor and spice! Season the turkey the day before and refrigerate it, uncovered, overnight; then slow roast the turkey the next day!

In a small bowl, mix together the following herbs and spices:

1&1/2  Tablespoons Himalayan salt

1 Tablespoon ground veggie pepper or black pepper

1 Tablespoon organic turkey rub

1 Tablespoon organic celery leaves

1 Tablespoon organic dried rosemary leaves

1 teaspoon organic dried thyme leaves

1 teaspoon organic wild cumin seeds

Depending upon the size of the turkey, you can adjust the seasonings up or down

1/4 cup extra virgin olive oil

1 organic lemon, quartered

1 bulb organic garlic, cloves peeled 

4 organic cippolini onions, peeled and quartered

4-5 ribs organic celery, large cut

1/4 organic fennel bulb, sliced

A few fresh herbs sprigs like thyme, rosemary and sage

1 free range organic turkey

4-5 pats unsalted butter, reserved for the day of roasting

1/2-1 cup white wine

Turkey broth

Rinse and dry the turkey, remove the neck and giblets and use for the gravy broth

Spread some onions, garlic, fennel and celery on the bottom of a suitable roasting pan, this serves as a natural rack

Place the turkey on the vegetables breast side up and tuck the wings under

Rub the turkey with olive oil and tuck the lemon, some of the celery, onions, fennel and garlic and a few fresh herb sprigs into the cavities of the turkey

Now rub the entire turkey with the reserved spice mixture

Refrigerate overnight, uncovered; this ensures a crispy brown skin

The next day, remove the turkey from refrigerator, let set for an hour

Preheat oven to 325 degrees Fahrenheit

Top the turkey with the butter pats

Pour the wine and some broth into the bottom of pan

Pop it into the oven, uncovered, and roast for 20 minutes per pound

Baste every 45 minutes; the skin will become crisp and brown

Remove the turkey from the oven, tent with foil and let rest for an hour before carving
