Creamy Stove Top Macaroni and Cheese with ChardHomemade macaroni and cheese is a super easy to make comfort food that comes together in a flash! My Creamy Stove Top Macaroni and Cheese with Chard uses four kinds of cheeses, yogurt and whole milk for a super creamy texture. Dijon mustard and Aleppo pepper flakes add a little zip to the dish. I used vegetable rotelli and organic Swiss chard to the mix for added nutrition. You can serve my Creamy Stove Top Macaroni and Cheese with Chard as a stand alone vegetarian pasta dish with salad on the side or serve it with an uncured kielbasa sausage link, or any meat of choice for added protein! 1 12 ounce box of vegetable rotelli or any short pasta, cooked just under al dente, drained and set aside

4 tablespoons unsalted butter

4 tablespoons flour

1 tablespoon dijon mustard

1&1/2 cups whole milk

1/2 cup raw cottage cheese

1/2 cup greek yogurt

1/4 cup soft chèvre goat cheese

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 buch organic swiss chard, chopped

1/2 teaspoon Aleppo pepper flakes

Himalayan salt and pepper to taste

Boiling water for thinning the sauce if necessary

In a large chef’s pan melt the butter on medium high heat

Stir in the floured cook for 1 minute

Add the mustard and stir

Add the milk and stir until a smooth sauce is formed

Stir in the yogurt, cottage cheese and goat chèvre 

Lower heat to a medium simmer

Add the shredded cheeses and stir until smooth

Mix in the pasta and chard gently

Season with salt and both peppers

Add boiling water to thin the sauce out a bit if needed, remove from heat

Serve alone or as a side with a fresh salad, Enjoy!!
